Taco Tank is the home base for Chef Roman Raya’s “oversize taco cart,” which exploded onto the Kansas City festival and brewery scene before finding a home in Parlor. Raya is totally self-taught and learned traditional cooking techniques from his Mexican-American upbringing. Taco Tank is co-commanded by Chef Madeline Buechter, with 12 years of training in fine dining, coffee roasting, and chocalatiering under her belt. Together, the pair have created a menu with classic taco cooking techniques combined with the best, freshest ingredients to make some truly explosive flavors.
